Crafting this expansive, twenty-piece tasting experience — presented in a limited-edition red box, just for Valentine's Day — Nicholas and Dillon drew inspiration from the regional traditions, flavors, and ingredients of five single-origin cocoa producers.

The Collection showcases ten unique confection varieties — two per origin, offered in pairs for sharing. One bonbon of each pair accentuates the chocolate’s tasting notes, while the other highlights the chocolate’s versatility when combined with region-specific foods. Distinctive flavors and textures emerge from origin-evocative ingredients such as tart soursop; woodsy Madagascar vanilla bean; and soft coconut marshmallow, which draws inspiration from fresh coconuts grown (and blended into drinks) on the Kokoa Kamili, Tanzania farm.

Included with the confections — presented in an elegant, reusable, fabric-covered gift box — is a printed card to guide your single-origin tasting experience.

Allspice-infused Maya Mountain, Belize chocolate ganache is evocative of K’oyem, a spiced Belizean masa beverage offered to new mothers.



Strawberry-Honey Ganache (2)
Gently sweet Rock Front Ranch wildflower honey is blended into fragrant 70% Maya Mountain, Belize chocolate-and-fraises de bois ganache.

Coconut Marshmallow (2)
Soft coconut marshmallow tops mellow chocolate-and-coconut ganache: a pairing inspired by fresh coconuts grown (and blended into drinks) on the Kokoa Kamili farm.


Quicos-Almond Praliné (2)
Corn is a key crop in Tanzania. Here, a crispy-creamy, salty-sweet praliné features toasty corn nuts, buttery caramelized almonds, and fruity-floral Kokoa Kamili chocolate.

Bright 70% Ambanja, Madagascar chocolate ganache is enhanced with uniquely woodsy Madagascar vanilla bean: a pure taste of Madagascan terroir.



Voatsiperifery-Persimmon & Lime (2)
K&J Orchards persimmons simmer to a velvety caramel infused with aromatic voatsiperifery peppercorns, layered over tangy Ambanja, Madagascar chocolate-lime ganache.

Coffee-Hazelnut Praliné (2)
Organic Oregon hazelnuts and roasted Sweettooth espresso beans are deeply caramelized, ground to a textural praliné, and blended with nutty Tumaco, Colombia chocolate.


Soursop (2)
Delicate caramel is crafted from tart soursop (a.k.a. guanabana, or custard apple) accented with St. George Spirits Botanivore Gin, then set with creamy Tumaco, Colombia chocolate.

Designed to be savored in one bite, this tropical bonbon features sunshiney caramel made of fresh, seeds-in passion fruit and fruity Costa Esmeraldas, Ecuador chocolate.



Peanut Praliné & Banana (2)
Creamy-crumbly peanut praliné (a blend of house-made peanut butter, peanut nougatine, fleur de sel, and Costa Esmeraldas, Ecuador chocolate) is topped with lush banana caramel.

Head Chocolatier Nicholas Bonamico, with Assistant Head Chocolatier Dillon Zell, runs Dandelion’s Confections program; their small team produces our Single-Origin Collections, Single-Origin Chocolate Nut Spreads, and seasonal confections by hand. Nicholas takes inspiration from the abundance of locally grown California produce to create elegant confections that tell a story. His ultimate mission is to honor and showcase the farmers and producers behind each ingredient, through origin-focused, indulgent "mementos" to savor.
