To taste a strawberry at the fleeting moment of nature’s peak ripeness is to experience the sublime. Oishii (‘delicious’ in Japanese) marries tradition with innovation to grow berries in ideal conditions, with just the right amount of light, nourishment, warmth, rain, and air. Then, they hand harvest them at their fragrant, flavorful peak.

We’ve teamed up for a very limited collaboration, showcasing berries of two distinctive varietals — the Omakase Berry and the Koyo Berry — each drizzled with a complementary single-origin chocolate.

Finding the best berries

Oishii’s special vertically farmed berry varietals originated in the foothills of the Japanese Alps. Not only are they intensely flavorful, they’re also hard to come by and are not available here on the west coast.

These remarkably sweet berries were harvested and hand-picked mere days ago at Oishii’s east coast farm, then carefully transported and hand delivered to our San Francisco factory.

Choosing the best chocolate pairing

In our Confections kitchen, Nicholas taste-tested the two varietals with every one of our chocolates, and selected two whose tasting notes best complement the berries’ aromas. “This pairing is all about the deep flavor experience,” says Nicholas.

drizzling for the most sumptuous bite

We chose to drizzle these berries with chocolate instead of simply dipping, which allows us to control the amount of chocolate on each strawberry, ensuring that every bite is exquisite.

Translating to “I leave it up to you,” Oishii’s meticulously cultivated Omakase Berries are delicately sweet, with a sumptuous, creamy texture. We drizzle each fresh berry with our subtly fruity 70% Maya Mountain, Belize chocolate — selected for its complementary honeyed-berry notes.

Oishii’s brightly sweet Koyo (‘elated’) Berry varietal offers a gently firm texture and juicy sweetness, balanced by subtle tartness. The berry’s complexity offers a vibrant counterpoint to our creamy, mellow 70% Tumaco, Columbia chocolate, which typically features classic chocolate, nut, and dairy flavors.
