2023 HARVEST · BATCH no. 1 · By trevor
tasting notes: dulce de leche, chocolate wafer, and almond

This cocoa comes from the Tumaco region of Colombia, where a small company called Cacao Hunters encourages cacao diversity by working with farmers to cultivate regional varieties. Cacao Hunters buys and blends beans from small farm co-ops, then coordinates export with Uncommon Cacao, a Colorado broker that provides cocoa to chocolate makers willing to pay a premium for high-quality beans.

Veteran chocolate maker Pablo — who joined our team in 2015 with a wealth of agricultural knowledge — roasts to enhance the beans’ creamy, nutty notes.

INGREDIENTS & ALLERGENS

All of our single-origin chocolate is made with just cocoa beans and sugar; no added cocoa butter, lecithin, or vanilla. Our chocolate is free of soy, dairy, eggs, and gluten, and it is made in a factory that does not process nuts.

Tasting Notes From Pablo

Origin Lead for Our Tumaco Bar

Hello, I am Pablo Aguilar. I’ve been working at Dandelion for seven years. This process of developing the Tumaco 2022 profile (PDV) was more dynamic than the first PDV, from the 2021 harvest, as I already had previous experience, acquired precisely from working on that harvest.

Tumaco’s flavor is incredible. Within the family of flavors, we were able to find chocolatey, nutty, and sweet aromatics. The official profile notes include chocolate malt, almond praline, and cream. It’s divine, and tastes great straight from the refining machine. It’s incredible. It’s so creamy. It’s like a well-aged wine. That’s the greatest satisfaction; everyone is delighted with it.

Hola, soy Pablo Aguilar.

About Tumaco, Colombia

Cacao Hunters is the first Colombian company to source cacao and produce cocoa and chocolate within Colombia. They're an ideal partner, as their openness to innovation and experimentation enables them to produce the best cocoa possible.

Cacao Hunters works passionately with farmers growing local cultivars in regions where income generation has been difficult due to recent conflict. Owners Carlos Ignacio Velasco and Mayumi Ogata (a former pastry chef) met in Japan in 2009, and have been working together ever since to produce high-quality cocoa in challenged areas of Colombia.

Having built strong alliances with Tumaco producers, Cacao Hunters supports local families by providing stable, higher-than-market prices for good cocoa. They work with a variety of regional associations, each of which ferments its own cacao with the company's assistance and advice. Beans from Tumaco make up more than 60 percent of the cocoa that Cacao Hunters uses for their own chocolate brand; we feel fortunate to be able to procure some of these flavorful beans to use ourselves.
